You mentioned that the courses you found so far come with accommodation. I suggest you to contact directly
travel operators specialised in languages trips and ask them if they can offer packages without accommodation.
Also, some colleges and universities may have English classes for kids during the summer like
Dublin City University for example. For now, they only have starting dates in June and August but it's to give you an idea.
Please note, regarding the current situation, it is difficult to say if Ireland will be welcoming overseas visitors by July.

At the present time, while our airports and ferry ports are open, the authorities in the Republic of Ireland are currently strongly advising against non-essential overseas travel such as tourism. All passengers arriving in Ireland must complete a
COVID-19 Passenger Locator Form. There is also a legal requirement for all travellers to quarantine on arrival for 14 days.
