Twenty five years ago my husband and I didn't book our accommodations in advance when we were in Ireland.
Each day we simply found an Irish Tourist Board office at the beginning of each day and made our arrangements.
Is it still possible to do that today?

That is such an amazing idea! Love the sense of adventure and experiencing the unknown that comes with it.

There are still Tourism Offices around the island, although things look a bit different today because of travel restrictions and current guidelines. As things are opening back up in a limited capacity with restrictions in place it is best to book in advance with flexible cancellation policies where possible in case there are any sudden changes.

There are some reasons why it may not be a good idea to arrive without booking in advance.
Main reasons are Availability and price.
Availability:
Especially during the peak tourist seasons or when there is a popular event going on, accommodation in some locations (Kerry Galway, Dublin and others) can become fully booked up quite fast and it can be very difficult to find suitable accommodation at short notice.
Price:
Usually the later you book the higher the price is. Which is why I always encourage people to book well in advance. Nowadays there are lots of options for booking without deposit with the possibility of cancelling right up to the last day.
