I'm landing in Shannon Airport on 17 of May (early morning) and departing on 21 of May (late evening).

Any ideas for places to visit? Places to stay? 
Transport options? Bus and/or Train?

You could use Galway as a "home base" for example. You can get day trips/excursions to places such as the Cliffs of Moher, Aran Islands, the Burren, and various other places. Here is a page on some of the day trips you could take from Galway, should you opt to use that as a home base, the article also includes transport options.

Galway as a home base sounds good. From Shannon Airport how can we reach Galway?
We love to walk and the outdoors.
Cliffs of Moher, Aran Islands, the Burren how to reach it from Galway?

There are several transportation options available to reach Galway from Shannon Airport, including bus, taxi, or rental car. 

For walking and outdoor activities, Galway is a great home base with easy access to nearby attractions like the Cliffs of Moher, Aran Islands, and the Burren

For the Cliffs of Moher, you can take a bus or drive along the Wild Atlantic Way, which is a scenic coastal drive. 

For the Aran Islands, you can take a ferry from the nearby town of Rossaveal or from Doolin, which is about an hour's drive from Galway. 

For the Burren, you can take a bus or drive along the Wild Atlantic Way.  If you prefer to walk, there are also many hiking trails in the area, including the Burren Way and the Cliffs of Moher Coastal Walk.

Please note that there are various tour operators and public transportation options available to reach these destinations from Galway.
