Late January/Early February trip itinerary ideas

My husband and I are traveling to Dublin with another couple the last week of January. We have all toured Ireland along entire perimeter and hit most of the hotspots. We are looking to experience more of the people, music, pub life and hidden gem sort of things. Knowing it is not perhaps most desirable time of year to be there with some places being closed we were still hoping to make it a cozy winter trip. Will be there 2 weeks and wanted to have 3-4 places where we base ourselves for day trips vs changing lodging every night or two. Would be great if they were towns with restaurants, and music vs remote locations. Any suggestions for activities, attractions, great pubs, lodging, restaurants and day trips would be welcome.
