Private Tours

I am looking for a private tour guide in the Southwest part of Ireland in may who'd like to take my wife and I on a private tour of the country side,  Interest are Sheep dog demonstrations, flight clubs,  highlights of the country, and history ..  Any direction on where I can find a good company who can make my dream trip come true would be appreciated
