Hello,
we are a group of 4 who booked a 15-day stay in Ireland before the COVID pandemic last February. The trip was supposed to be itinerant traveling in various cities. We wanted to understand if coming from Italy we can come or not ... we tried to write in vain to the Italian consulate in Dublin ... without an answer ... how should we behave? We delete?

I can understand your concern about being able to come to Ireland at this stage.
All visitors from any country are required to self-isolate for 14 days, avoiding contact with other people on the island. 
I would also like to share the Farnesina website "Viaggiare Sicuri", where you can find out the measures taken at the moment for visitors from other countries. Please keep in mind, as noted also on the Farnesina's website, that the measures can change any day, that's why it is important to check updates very frequently and stay in touch with the airline company, tour operator, and facilities booked (if any). 

On the Viaggiare Sicuri page, you can also find links to the calendar of the roadmap for reopening society and business, followed by the Irish government and in particular the page with advice for traveling during this Covid-19 period. Here you have information on what to do when arriving in Ireland.
