Hi pleasure Thom, my Girl and I are Italians and we are thinking of going to live in Ireland but we do not know what to start from and who to support us for work too?

Hi Thom, nice to meet you! Since you and your girlfriend are Italian, you can move to Ireland without a visa.
The first steps are:
Start looking for jobs: Irish companies and recruitment agencies can support you in finding work.
When you arrive, get a PPS number and a local address for work and services.
Look for accommodation early, especially if you’re considering Dublin.
Improve your English if needed; it helps a lot with job interviews.
